Chinese Rice Noodles with Beef


  • 250g (8.8oz) Chinese rice noodles
  • 500g (1lb 2oz) beef sirloin, cut into thin strips
  • Light soya (soy) sauce
  • 60ml (4 tbsp) hoisin sauce
  • 2 medium-sized carrots
  • 150g (5.5oz) shiitake mushrooms, halved
  • 300g (10oz) broccoli
  • 90ml (3fl oz) groundnut oil
  • 5g (1 tsp) sambal oelek (hot chilli paste)
  • ½ bunch Thai basil
  • 15g (1 tbsp) dried shrimp-chilli flakes


  • 1 Cook the rice noodles as indicated on the packaging. Drain through a colander and rinse with cold water, then drain well.
  • 2 Marinate the beef strips in a little soya sauce and a few dashes of hoisin sauce. Peel the carrots, cut them twice lengthwise and then into strips.
  • 3 Break the broccoli into florets and peel the stem with a knife. Cut the stem in half and then into diagonal strips.
  • 4 Heat 4 tablespoons of oil in a wok and sauté the broccoli florets, stirring constantly. Add the carrot strips and fry for another 3 minutes. Remove from the wok and set aside on a plate. Clean the wok with a dry towel, pour in the remaining oil and heat.
  • 5 Now fry the halved shiitake mushrooms over a high a heat. Add the marinated beef and fry quickly over a high heat. Add the cooked noodles and the sautéed vegetables and stir – the vegetables should still have a little crunch to them. Season with hoisin sauce and sambal oelek, sprinkle with Thai basil leaves and dried shrimp-chilli flakes. Serve.
