Beef Enchiladas

Ingredients
- 300 g10½ oz lean minced beef
- 1 tbsp olive oil
- 1x 400 g14 oz large tin of chopped tomatoes
- 8 tbsp tomato based salsa
- 1 tsp chilli powder
- 2 green chilli peppers, sliced
- 4 flour tortillas
- 100 g3½ oz refried beans
- 4 tbsp low fat cheddar cheese
Method: How to make Beef enchiladas
1 Heat the oil in a non-stick frying pan and cook the beef over a medium heat, until browned.
2 Drain off excess fat and stir in the tomatoes, salsa, chilli pepper and chilli. Bring to a boil, reduce heat and simmer for 10 minutes. You can also use package enchilada sauce for convenience.
3 Spread the tortillas with the refried beans, then spoon the beef down the centre of each one.
4 Roll up, place on a plate and sprinkle with cheese. Cook for 3-4 minutes on medium heat in the microwave.
5 Alternatively, place in a baking dish and bake in the oven at 180C/Gas 4 for 15 minutes.
